I did it the other way on a lightish road bike, with a small bar bag and 10L backpack. Donald Hirsch route Paris to Dieppe. Ferry Dieppe to Newhaven (www.dfdsseaways.fr/traversees/dieppe-newhaven/#.UvjizPl5PpU). Coastal road (A259) Newhaven to Brighton, then there are several London to Brighton routemaps online. 1 day UK, 2 days France (though the France bit can be 1.5 days).
Watch out for most shops being closed on Sundays, afternoons especially. Stayed at Les Chambres de l'Abbaye in Saint Germer de Fly, they've got a small building just off the front drive to put you bikes in.
