The stadium itself is located on Falmer Campus of the university. As such, there's quite a few Sheffield stands and whatnot that will be free - I used to live on that campus too, so I can confirm that even of a night-time, it's pretty ghosty - I would feel comfortable leaving anything there for a few hours. If not, leaving it at the train station may be easier in terms of access (there are sometimes guards preventing fans from entering the main campus grounds for obvious reasons) as well as the ease of picking up the cycle route into town
Route wise, finding it to start with may be remotely tricky but once you're on it, it's 1 straight road from the stadium to Old Steine/the pier, which is about half a mile South East of the Station. I'll assume you can get from the pier to your hotel.
You wanna follow the crowd to the train station and get over to the A27 side of the station - that'll be the side of the station the stadium is NOT on. Go under the dual carriageway through the subway, and as you come back up on the other side there is a left turn-off before the trees start. Pick this up, and this is the start of the route that will get you back to town. You have to switch back over to the regular side of the road, it's up to you where you do this, but you need to be on the left side of the road by the time the dedicated cycle lane begins. It's about 6-7km from this point to the seafront.
Oh and if you've not ridden Lewes Road before, the cycle lanes go BEHIND the bus stop - caught me out first time
