It will depend on what sort of off road you are doing. If fire roads, compacted gravel etc,. then 63 is great, if more technical single track or muddy then 63 is a slog.
63 would be a good start though I think. -

You don't need a narrow wide for CX.
Thorn singles do the job. But any non profiled chainring will do with the appropriate chain retention. Which means a SRAM type 2 mtb mech. Shimano users will need additional chain retention until Shimano get their act together and produce a road compatible mech with a clutch in it.

How come not needed for CX? Tbh I'd be thankful of the extra retention (presuming clutch RD and no chain device). Even with a properly adjusted 47.5mm chainline in the top and bottom cassette sprockets chainline is far from ideal. Even more so with the wider ranger larger sprockets (36t).

apparently narrow/wide has proven to be bad in wet mud conditions too.
I have always used around 60" for single speed and 63" for fixed off road.
60" is great for uphills, single track etc,. but too low when fixed on the road sections.
Both are too low for longer road rides but if your 5 road miles are mostly up hlll then it may be less of a compromise and I would go for around 60". Too high and it takes the fun out of it when off road (unless you are racing sscx and ignore that as you will be going faster!)
