It's kinda like asking why people prefer a saddlebag over two panniers on the rear, it make sense on a day-to-day basis.

FWIW* I've gone from preferring a Carradice saddlebag on my commuter to a single rear pannier for the space, the lower CoG and the lack of bounce from the saddlebag rack.

*I've calculated this to be somewhere between "nowt" and "fuck nothing"
