San Juan is beautiful, the islands are beautiful. You'll be in San Juan for the San Sebastián festival, which is fun. If you have time, try going to el Yunque, which is the rainforest covered mountain in the middle of the island. It's quite pretty, and home to some deep caves you can explore and also to Arecibo, which is a ginormous radio telescope (and also where that bit of goldeneye was shot). Eat some alcapurrias and some mofongo, drink some rum, dance some merengue.
Also bear in mind that it's a poor country with a drugs and violence problem. If someone gives you beef, back down and walk away. Don't go traipsing around random bits of town drunk at night. If the police or the national guard tell you not to go somewhere, don't. Generally, if you stick to the pretty bits you'll be okay.
Bike wise - it's like the mainland US, very car-centric, so I'd probably rent when I needed rather than take my own.
PS - avoid fat Americans by speaking Spanish. Although, many Puerto Ricans are sizeable and they all have American passports. So...
I don't really know about the buses or about couch surfing, I generally stay with family and they drive everywhere.
