Magic gear basically means finding the exact gearing that fits the rear snug in the dropouts. It takes a little fiddling - and often a half-link of chain thrown in too, but it does work. When the chain stretches out a bit, you can end up with a little slack, but usually pretty OK. You can always take the half link back out after a while. Or, new chain...
The hub is a bit more complicated - basically it has an off-centre axle that can be turned/swivelled in the frame until the desired tension is achieved. Simple, effective and awesome. This is probably a clearer explanation - White Industries ENO hub - YouTube
