Saddlesores happen - you will never have a clean enough gooch to prevent bacteria, and although you can reduce the amount with good hygeine, if there is broken skin, infection can occur.
The problem with saddle sores is that they can heal over, but still have bacteria beneath the skin, leading to swelling and abscess, and fun times when they burst.
The only way you're going to get rid is to not cycle, or to change your saddle / position / bibs combo.
It's possible you may have an ingrown hair too, which makes healing take forever.
