Might consider a hardshell too, 1 jacket for those days where it just rains or is super cold and snowing. Hmm

You can get thin down jackets with a waterproof membrane from Patagonia, or thicker more waterproof softshells with a waterproof outer membrane (these arent technically softshells though). Check mountaineering/hiking/climbing clothing sites. If you get something climbing specific theres a good chance it will fit on the bike.
