I think Jake (rusby) is a talented framebuilder would go with him in a heartbeat if I had money (or space) for another bike.
Would be interesting to know what are your (and jake's) ideas for this bike in detail.
Edit:
I'd stay away from electronic for 2 main reasons for this bike. Weight saving and simplicity. Horses for courses approach. If you're really keen on electronic still i'd say go DA9000 Di2 and not Ultegra.
Electronic groupset is great for winter bike but for sunday best I wouldn't be able to justify it for the two reasons I mentioned.
I'd have the same argument against disc brakes on this bike too. Between V-Twin and 6700 brakes with swisstop blue pads riding the same route in wet the difference in braking I get is not more than 10% to 20%.
