Thanks all for the Ortlieb suggestions, I'm dead set on these now - just need to find the best ones. Ideally one that can convert to a backpack, but the ones I've seen are quite expensive!
These are good - found two of these on wiggle http://www.wiggle.co.uk/ortlieb-back-roller-city-panniers/ problem is they don't have a shoulder strap when I have to go into the city without my bike... for example, these ones seem to have the shoulder strap
