Bikes are quite a good analogy. A correctly fitted specialised allez with the right tyres probably does everything a more expensive bike does. A Pomp would have done everything your BMW does without needing any alteration for a fraction of the price.
From what I can see for new watches, a grand seems to be the tipping point into a bit of a nomansland. As in I'm not sure what you get for £3k that is any different from a £1k watch.
A lot of it is very personal I think, to people who use their phone / computer / the sun to tell what time it is, there's little "value" in a nice / expensive / different watch... The same way that I wouldn't spend £100 on a night out getting pissed but would quite happily spend £100 on a meal for two, or a pair of jeans or three times as much on a pair of shoes...it's about what you like
