A 10lb monster bone-inn shoulder, smoked over plum and cherry for 10 hours (foiled after 6 to beat the dreaded 'stall' - thanks adoubletap). 'Slaw with home made mayo from our own eggs and 'North Carolina' style hot vinegar sauce using our own cider vinegar.
