Little Toyko is a big Japanese place with vegan stuff, the bento is incredible!
Out Of This World is a nice health food shop that also has a great cake counter, get the blueberry fudge slice. Also nice savouries, you won't need Holland & Buttcrack sos rolls no more.
Roots & Fruits is a strange but friendly little cafe, good for a hungover breakfast if you want someone else to cook your Lindas and hash browns. Then if you leave the arcade at the top and turn left you can look downstairs in Relics records.
Pitza Cano does vegan pizzas, in a drunk-after-a-gig way. There's another place called Grove that some people prefer, and you can sit in.
Semi-related but I can't talk about Leeds without recommending Laynes Espresso for best coffee. Pretty sure they always have a vegan sandwich too.
I've hardly been in the last few years so there's probably more...
