Rat bike is a bike that is ratty. . . A bike where it maintaining a basic level of function is the first and only concern - mismatched parts, old, ugly, stupid or whatever, anything goes as long as it works.
A beater is similar to a rat, a bike built for getting around (often in winter) where it being robust or just low value while maintaining function is the priority. EG building an old frame up with old parts to ride to work or the pub or when the weather's horrible and you don't want to take your fancy bike.
A slave bike (abbr. of Hip hop slave bike) is generally a street fixed gear with expensive componentry and often carbon wheels - similar to a modern high end track bike but with riding on the street in mind. Brakeless is a plus.
