Sounds like a nice project.
First, are you going vintage or modern? Sounds like a little of both from what you have mentioned. Stick to one or the other.
Headset wise. I would go for something like a this.

Needle bearings are more reliable and hassle free.
All the parts you need will come up in the classifieds section. Keep an eye out as there are some great parts to be had.
