IMO ti finishing kit looks rubbish - with possible exception of a nice seatpost.
With James on the compact double - that plus a 27 on the back will get you up anything.
Re: fitting - keep in mind you will want to keep this bike for a long time (hopefully) - so go for a size that will allow some room for adjustment fit-wise in years to come.
