Yaki Soba in Chortlon is my favourite restaurant in Manchester, no idea about vegan options though. Thai place called Phet Pailin in china town is good and its unlicenced so bringing your own booze saves you some money. Coriander is supposed to be great and its vegetarian I believe. Gorilla by Harry Hall do a FIT sunday roast.
