9 speed chains are narrower than 8 speed: I'm not sure if the spacing between the jockey wheel cage plates is reduced, so check the chain fits through cleanly.

Should I replace the jockey wheels of the veloce with my 8 speed jockey wheels? -

9 speed sprockets cover a wider area at narrower intervals, so provided an 8 speed chain fits through the cage plates (which I think it will) you shouldn't have any trouble, but it might run more *smoothly *with 8 speed jockey wheels.
You'd have to assume there is a reason why there are speed-specific wheels and it's not because the teeth are narrower, so it must be because they are narrower overall.
Looking for a Campy 8 speed rear mech (ergo compatible) in good condition.
Would prefer Chorus, Athena or Record.
