    5 scallions
    5 sprigs of fresh thyme
    2 teaspoon salt
    1/2 teaspoon black pepper
    1 tablespoon brown sugar
    2 teaspoon ground allspice
    1 teaspoon nutmeg
    1 teaspoon cinnamon
    2 scotch bonnet peppers
    1/3 cup soy sauce
    2 tablespoon vegetable oil
    1/4 cup vinegar
    1 onion
    1/2 cup orange juice
    2 cloves garlic
    1 teaspoon grated ginger

    I used twicw as many spring onions, added the juice and zest of a lime and an orange and used olive oil instead of vegetable then added more soy/seasoning to taste... Really good...
