For some one who does mail order, although I've never used them, this guy looks great:

The actual watchmaker I use is Tomian in Edinburgh who are very reasonable. The last time I used them was for my Ebel which was serviced and had a new mainspring fitted for £100. I don't know if they'll work by mail order though.
