It's almost there. I went a step further from my initial idea but I think I have found something that meets quite well my future commuting needs.
8sp internal gear hub, Schwalbe Marathon Racer tyres, Avid brakes, MKS pedals, SKS fenders and Ergon grips (!) are on the menu.
