Yeah the learning curve can be steep. Don't be afraid to go to their forums or check out some of the Let's Plays on YouTube. I'm usually loathe to do Let's Play videos as I don't want to spend 30-45 minutes of my limited gaming time watching someone else play, but they do help here.
All of them have different styles, some may grate, but they all walk through some of the confusing bits. I have gleaned knowledge from all of them, and there are many more. But fully 50-97% of the fun in CKII is in losing. Building up the perfect empire to be crushed by a fucking cousin from some marriage you arranged a generation ago because your heir is a simpering, hedonistic half-wit is pretty much my endgame.

I only have experience with CKII right now, but picked up Europa Universalis III and Victoria II in some bundle sales because of it. This is a treacherous time sink, and telling my wife that I've poisoned my queen, had an affair with my son's wife and am sowing discontent with my neighbours has led me to be on the receiving end of some steely-eyed glares.
