5Nm is usually the limit for crabon bars, innit. Alu bars are a bit more forgiving.
Seat clamp bolt and seatpost bolts can vary a bit. Thomson say 7Nm for their bolts IIRC. My stupid seat clamp on the Bob Jackson needs about 9Nm not to slip.
