I'm having a burger-off with some friends. Obv, I want to win.
Everything is going to be from scratch, apart from the bun/brioche, which I might try and bake, but will most likely buy. I want your tips.
Plan is:
to incorp marrow in the patty.
Home made ketchup and mayo.
Gem lettuce
White onion, raw, rings
Raw slice of tomato - what are the best eating tomatos, beefsteak??
What cheese?!
Anything else?
Unfort, the audience is generic tasters, so should appeal to the masses, to win.
Comp is Sunday. Revised plan is:
50% Sirloin, 25% Chuck, 25% Brisket
Replace marrow with some smoked pork fat
Gem lettuce, beefsteak tomatos if I can find them, pickle
Red vs White onion - to be trialled on Sat
I have some Ogleshield and something else I can't remember - trialled on Sat
Cloche and salting as discussed
Smash and scrape technique
Trials will be also done with the suggested clarified butter and the umami anchovy
