I once converted a similar bike to fixed - lots of people have.
Here's mine
They make good fixed conversions, but you need to be careful about the bottom bracket (French thread) and seatpost (very small diameter) Not sure whether they have a funny thread on the headset, but mine took a normal* diameter handlebar stem
There's plenty of info on this site about the finer points of "fixing" a peugeot of this era and many people have done it and enjoyed the process and results!
*(that was the only normal thing about the stem, it was a shimano/cateye CELC with a computer integrated in the aluminium casting!)
