• Levers / cables / bars / stem should all fit fine, but you should consider stem length and handlebar width. If you know what you had before then that's easy, but if you don't then it might be worth trying out some stuff from a parts bin or seeing if you can find a complete Aether 30 at a shop somewhere to try. 100mm seems a fairly short stem for modern compact bars, but it's entirely possible that it's correct.

    Headset is a little trickier as the stack height will effect how many spacers you can / should use to get the right stem height whilst compressing the headset properly. If you had loads of spacers before then it will probably be fine. If not, then you should try to find out what headset was in there previously.

    Oh and they nicked your headset?? Blimey. I'd assume they usually only take the top cap with the stem, which can be replaced easily at any LBS.
