Improved varieties through selctive breeding. The bitterness is palatable, but salting will still reduce it and I think improves the texture too.
To a certain extent. Salting Aubergines does help if you fry them however as Aubergines act like a sponge in the presence of oil I really don't bother frying them any more.
Roast them. With a 'drizzle' of olive oil instead.
Makes them more tasty too!

I practically dry-fry mine, just a tiny dribble of oil in the pan... I don't bother salting either... Delicious in melanzane parmigiana that way, they've almost melted when they come out of the oven...

Yup, exactly the same price as before. - they had a wagu option today for 20 quid but I decided I'd rather have a couple more drinks.
They currently don't have the Bloody Mary but I made an empassioned plea to bring it back (many others have done as well, so here's hoping). The service was really great as well - and we bought some of the little cleavers for xmas presents.
The lack of bloody mary and the new plates the steaks are served on are the only annoying things about the fully fledged restaurant.

Now I'm living at home & I'm nearer to family this christmas gifts are of cake. My cousin & his family are having their first English Christmas (they have been living in Sweden) so I have made them traditional christmas cake (with fruit soaked in homemade coffee stout) & a yule log. I hope they like them...

Our Turketta®©™ came out amazingly, cooked it at gas mark 1 overnight and it was beautifully moist...
Replace pork shoulder with a turkey crown (with some dark meat also rolled into it)... My new stuffing recipe also came out great, Mrs TS said that was her fave bit...
PS The Turketta®©™ gravy was incredible, did nothing to it but reduce the juices by half... Wowzer! -
