A lot of people, myself included (at 80kg) use mavic ellipses as everyday wheels and they are 20/24h iirc.
Ellipses are 20/20. RS30s are 16/20, and I'm fine on them at 90kg+. I've used 20/24 spoke R500s off road. In the end, it all depends on the rims, a pair of Mavic Argent 7s or GEL280s with 28 spokes are going to be for hill climbing whippets only, whereas Mavic DeeMax have 28 spokes up front and are used for World Cup DH races.
