The reason you can not true those wheels is because you can not alter the spoke tension, it is a one piece construction, the inability to true it is nothing to do with the material!
Regard's repair, you can get (some) carbon wheel's repaired under some circumstances, but it may not be economical.
Are you sure the actual wheel is out of true and it is not something daft like an off centre/unevenly fitted tub? Take it over to Harry Hall's and have them take a gander if you are unsure.
