Depends very much on your budget. The best? Phil Wood, DT Swiss and Mavic IMHO.

Bit OTT for a conversion job/my first SS surely...I really rate Halo rims and hubs for the price.

First time you build a wheel. Buy whatever reasonable stuff you can find, it is still fun to do, and very satisfying.
