Aren't chips fried or roasted?

Oven chips (technically cheating) are roasted.

Proper chips should be fried.

And not be cold/under done in the middle.

Looks like they are cooked after all:

The first secret is cooking the chips until they are almost falling apart as the cracks are what makes them so crispy. The second secret is allowing the chips to steam dry then sit in the freezer for an hour to get rid of as much moisture as possible. The final secret is to cook the chips in very hot oil for a crispy, glass-like crust."

Sitting them in the freezer won't get rid of the moisture. The moisture will just freeze.

I scooted by but no one was there. That's what you get for leaving work in Battersea at 5.

It's C&H consistently at the moment, as far as I'm aware. Corny was having some success in persuading them to come up with a more basic menu for the Monday crowd, last I heard.
