Unfortunately there's not so much to do..
A good rule of thumb is to consider that people don't care. No one bothered and not many will consider "just a wheelset" as something valuable..
I am now thinking what's the right level of "paranoia" that we should adpot when locking the bicycle.. I know, I could spend 5 minutes to lock the bicycle with 5kgs of locks and maybe decide to find a place in the pub with a visual on it.
But sometimes you just want to put a u-lock and enjoy the rest of your life without being constantly warned.. -

If he got both wheels off I assume you locked the frame only to the stand?
Unfortunately you've already drawn attention to your bike doing that particularly where you are locking up.If rear wheel was secured through the frame he probably wouldn't have bothered for just a front wheel and looked for the next unsecure wheelset.
You have to at least make your bike a slight PITA to deal with to prevent an opportunist drive-by like that.

that sucks. Kingsland road though is well known for its bike thieving activities especially higher up where Rio cinema is. and it really doesn't matter if it is busy or not...worst area to leave a bike. (wires for wheels do not put them off either- you will need to D-Lock wheels)

Christ, I can't relax locking my bike up for the evening with two locks, all allen heads filled with ball bearings and a plastic bag over my saddle.
It'd be like leaving your chips in Trafalgar Square and trusting the pigeons not to eat them.

i just sling a krypto cable around both wheels every time, it doesn't take much longer than just using a d-lock and though it wouldn't stop a determined thief it stops 99% of opportunist cunts like that from being able to walk away with them in less than 2 minutes

Apart from any thief who happens to be armed with a pair of nail clippers. Cables = 0 protection in Dalston.
Why were you locking 2 bikes with 1 lock? Maybe the person you were with should have been more considerate and bought their own locks too!
Thieving sucks, but unfortunately it's a fact of life in London's famous Dalston, especially if you ride blingy bikes. Why on earth the op went out for a night out round there without enough locks to secure the bike is beyond me :/
Hope the thief gets caught, stubs their toe really badly and the op learns -

Foiled again by my cartographical inadequacies. Bugger.
Last evening I locked my bicycle in Kingsland road, few meters from the junction (the one that connects old st, shoreditch high street and kingsland road).
After a quick pint I came back the bicycle to notice that both wheels where missing..
I promptly asked to a pub if I could see the footage of the security cameras, and the bartender kindly allowed me to record the video with my phone..

Police probably will not bother spending time to search a wheelset, I reported the crime but I really doubt it will help..
On the video you can see the thief, the quality of the footage is more or less the quality of a potato camera, but It's still interesting to see how easily someone could nick parts from our bicycles..
The wheelset is a standard alex rims set from a langster steel.. If you see it on gumtree, please give me a shout!
