Whatever feels comfortable for you - a good starting point would be the width of your shoulders.

I used some spare bar tape and road them uncut for a week. Noted where abouts my hands naturally rested, and also the widest point used when climbing.
It came out as a bit wider than my shoulders I think.

Anymore than a Ugandan child-soldier's fist size either side of the stem is a faux pas.

Id like to use some risers on a new build. Its a commuting, albeit on back roads type deal. I think they are about 630mm wide! Whats the optimum width so as not too look like a hipster?
