Syd's 2 in Hove is pretty good, just don't go in on a Friday as they have staff from the other shop working then and they don't seem as helpful.
Baker St have also given me a couple of bits FOC in the past, nice guys!
Aaron & Kevin in Farm road always have loads of second hand shit and let me rummage through their box of brakes recently, selling me a very nice back brake for a fiver.
Prestige Cycles in George Street Hove looks like an awesome shop, not been in there yet.
I also picked up some bits from Webb Cycles in Portslade, its a traditional, old school shop.
The BMX shop in Baker St (?) off London Road has some really cheap brake cables - £2.99 for a 3m length.
Having said the above, I like Cheesecake prefer to service/build my own bikes its satisfying and cheap!
All the bike shops in Brighton seem to really helpful if you ask nicely!
