A thought for rims, Campag Omega Strada V, they do 36h and are prety stiff too.
I haven't manage to ding them at all, and I'm 20kg heavier than you.
But if classic isn't too much of a priority, I'd totally agree with the H&Son TB14 rims in the dark gray hardox finish, will look very smart and they're 23mm wide to boot.
