I've seen the guys that sell the parts to the stall owners at Brick Lane before. They definitely aren't skag heads.
They know what they are doing and what to go for, but they never earn top dollar for their wares as they need to get rid asap.

I'm thinking even personal use. Why not build up a stable of impressive parts, bars you can swap around for any given occasion, swap a stem depending on your mood. I have a gut feeling about this.

Whoever buys a stolen item can easily be oblivious about its provenance.
Without resorting to violence, the best response to thieves is to not change your behaviour a jot. You have a nice bike stolen? Get another. Don't deny yourself. I've had several stolen over the years, and yes it's crushing. But you get another. The pleasure I get from a build, then enjoying the bike, far outweighs the slump if one goes walking, despite the immediate pain it causes. But you pick yourself up by replacing it. Unlike a lock, that's a constant will which cannot be broken. Fuck you. You've made your few quid, but you're the one who is trapped. That burden is not mine.

The market traders I know who deal with bikes down Deptford way insist on taking photos of the seller holding the bike and further ID before considering a sale. They're well into cycling though so they tend to give more of a fuck about bike theft IMHO.

Just had my wheels stolen from directly outside the Sebright Arms - opposite the seating area no less. It happened between 8pm and 10.30pm.
They are/were H plus Son SL42's (with the braking surface) - black with black spokes and nipples on black blb hubs 32h. They're quite old and I have run a brake on both of them so the front braking surface in particular is quite worn. One is also missing the sticker that sits above the valve hole. The front has a Maxxis Re-fuse tire, the back a brand new armadillo elite Roubaix. There is a Miche 18 tooth sprocket on one side and a Shimano freewheel on the other.
Those are the details.
I don't expect to see these again but be warned that area might be being targeted at the moment - on the way home I spoke to a guy from the bike shop on Hackney road (near Hoxton station) and he said I was the third person tonight that he'd seen walk past sans wheels.
If you are offered these wheels please take the opportunity to perform some street justice and thrust your foot or any other heavy object into the vendors genitals and/or abdomen.

I did realise that could make me sound like a spoilt brat, but nothing could be further from the truth. I don't even have the pot to piss in. Get another in good time is what I mean, whenever you're able. That's the show of defiance I'm getting at, and what I've had to do myself. Invest yourself again in the process. Don't be put off, despite limitations.

By the way the bike thieves who used to resell stolen bikes around the Brick Lane Market area have now long since been frightened away by increased police activity at that market. But there are a couple of licensed second hand bike stalls. But the condition of most of these bikes is terrible. Usually they have worn out bottom brackets and the brakes don't work too well.
Absolute shitters, really sorry to hear about these.
Can't believe someone could do that much in the morning without anyone noticing. Maybe put a notice up where the bike was left offering a little reward for info and someone who saw something might be able to help.
