Julia Childs French cooking although american is the most instructive I have used on french food. I also think the CIA bookbook, which is the culinary institute of America not the central intelligence agency, so its just boring old food and not radiation infested treats that a Russian KBG agent cannot resist, is also excellent as being highly comprehensive and encyclopedic.

I have that but it is not easy to follow technique wise. Bourdain's Les Halles cook book is better for getting to grips with French classics. Cracking read too.

The best fried chicken I've ever eaten was cooked by a Miss Etta. At the time she was an 88 year old woman and sharp as a tack. She was the granddaughter of a freed slave who was full of stories - a simply fascinating and engaging human being. And an amazing cook.

Probably. That was 1987-ish. I doubt that at 113 she's making much fried chicken these days. Plus you'd have to go to the shores of Lake Texhoma. Her fried catfish was something special as well.
