Sounds like a great plan! I bought the Michelin map (with the small scale, don't remeber exact, but it's famous) of France when I did my tour and copied all of the possibly needed maps and took 'm with me. Otherwise, if you have space/don't care about the weight, you just take the whole damn thing or weed out the maps you surely are not gonna use. Then I just rode on the map, and took the black, smallest roads as often as possible. There is also a lonely planet "cycling routes of france" which undoubtedly has something interesting. I'm not in London, and I don't have it with me here to look something up for you.. Good luck man, enjoy it, and I hope that famous Brittany weather doesn't play up..
