Oh man, such a pain in the arse. I actually can't find a way to turn S-OFF using a mac (i dont have a pc). The htcdev.com unlocker won't work..

Htc dev to unlock? Then Doomlord for root?

That's exactly what I did. Took so long. Had to find a windows PC first, it was just too difficult with osx and even with Ubuntu.

Can anyone recommend an ics rom for my desire s. The lack of released kernel and sense v nonsense seems to make the choice bewildering. (Also , ROM Manager only has Gingerbread as downloads.)

If anyone is interested, I tried an alpha JB CM10 which was lish but buggy. Ended up on Ice Cold Sandwich which is great but a tad battery hungry.

This has just encouraged me to check for updates, and there was one available which I am downloading now.

4.0.3 was my current release, I expect this is a bug fix of some kind.

Samsung GS3 ToolKit. Rooting and unlocking are different, the tool kit does both. I probably wouldn't bother rooting unless you know what it is and need it for an app.

Your network might not be bothering with OTA updates for Samsungs running Android. Try connecting it to a PC and using Samsung's shitty iTunes clone "Kies" to update.
