I've been doing this a lot lately:
1 x chicken breast, butterflied
2 x tablespoons of green pesto, cheap stuff in a jar
Apply pesto to chicken, slather, season, pan fry, add lemon juice. Even the crispy black burnt bits of basil from the pesto taste lovely with the lemon juice.
