I disagree on the on the brakes, especially if you talk about hydraulic brakes. Hayes have almost zero modulation. No amount of gentle persuasion improves matters. Initially I thought it was just me but I found plenty of others reporting the same thing. Different people like a different feel, I really like Shimano kit, other people won't touch it with a barge pole.
V-brakes - you can change a fair amount with setup (toe-in etc), pad choice and using a booster If it's a bit flexy.
Some people seem to forget about the cable routing and just go for nokon. Not to say that Nokons are bad but it's a lot of money to spunk on cabling
