My gut feeling was to go with a compact in the first place, but then I thought that if I wanted an ultimate all-rounder, (especially for touring) then a mtb triple with a 48t was the way to go.

The 34:34 would get you around with all but the heaviest loads. Nothing wrong with a triple though.
