It's only SATA II but the mac isn't SATA III compatible anyway.
To do the same, follow these steps:
Buy or acquire T6 & T8 Torx screwdrivers & Phillips Screwdriver
Buy SSD Drive, 2.5" -> 3.5" hdd adaptor: http://www.ebuyer.com/168671-kingston-2-5-to-3-5-hard-drive-bracket-and-screws-sna-br-35
Buy SSD (duh)
Create a bootable USB key of Lion Recovery Partition: MacRumors Forums - View Single Post - Lion recovery USB image to DVD
Clone original drive on an external USB drive: http://help.bombich.com/kb/usage-scenarios/i-want-to-clone-my-entire-hard-drive-to-a-new-hard-drive-or-a-new-machine (make sure this runs by plugging it in and booting from it, holding down option key, on a restart)

It took about 30 mins to dismantle and re-mantle the iMac and it now runs like an absolute dream. iTunes opens on one bounce!!
