My Wilsons cycles touring build has progressed a good deal since I last posted it

I've added:

• Shimano 600/Mavic MA3 wheelset with 7 speed cassette
  
• Tubus nova front rack
  
• Tubus cosmo rear rack
  
• full ortlieb pannier set (I already had the rear ones, just bought matching fronts)
  
• Campag c-record seatpost
  
• Honey Brooks with copper rails and rivets
  
• ITM stem and handlebars from Pistoffski
  
  

I'm very happy with how this is turning out and looking forward to getting it finished and wearing in that saddle after my exams!
I'm sorting out 3x7 speed STI shifters, and still to get

• bartape probably honey (brooks maybe?) to match the saddle,
  
• rear derailleur,
  
• cables+housing etc
  
• Gumwall tyres, thinking 28c should be what i need for carrying a decent load with nice pressure and low rolling resistance?
