Learning to build your own is a great idea rohaaan. You'll also learn a lot about what makes a good wheel!
There is some info on this forum regards calculating spoke length and Sheldon Brown's pages are great. UTFS.

Rigida DP18s are pretty good if you want 30mm of deepness. They're not ridiculously heavy (around 600g?). With Double Butted spokes and those Novatec/Rebranded hubs you should have a strong set of wheels.
