Will you be using rim brakes?
I think you'll struggle to find many (if any) 29er rims that aren't disc specific.
I'd go with Velocity dyad if you're using rim brakes.

There's an article somewhere about using road tyres on 29er wheelsets, and there's also the sheldon brown tyre table. From memory I think you'd be fine using anything +28c.
