I want to make cornbeef like mum does. In Oz you can buy it in the supermarket - usually a big chunk of vaccumed packed meet (brisket) that has been salt cured. You then boil it in water with little onions, bay leaves and pepper corns. Slice it thick (like what you get on salt-beef bagels) and have it which cauliflour cheese, mashed spuds and picalilli. Its bloody fantastic.
I don't want canned shit.
I dare say I can get said cut/type of meet in the UK - but is it called something else? Can't seem to see it in the supermarket/butchers.
You can get proper salt cured beef brisket (corned beef outside UK) as served in Brick Lane beigels from the butcher in Selfridges.
Think its the only place I've seen it retailing and pretty sure its from Hensons who's website says they do supply butchers and delis.
