I used the chain method on my rescue build, I did'nt really stress about locking that bike anywhere, but was just sensible where I left it locked up.
It's true, it does kind of advertise the fact you've got a decent saddle, but you still need to protect your saddle as Stem only rides up 'poke ass'. Not sure how effective the bag trick is to be fair, but I guess any precaution is better than taking none at all.
