I've had a pair of almost all of Varno's different wheels before. They're all bullet proof and countless forumengers can testify to the hammering that they can take.
For city use, I prefer the Mach1 rims. This is because they are the lightest and spin up more easily from the lights. They also go up hill the best. Thats just personal preference though. I ride Varno's DP18s every day (several sets in fact) in London and can never seem to get them out of true no matter how hard I try. They are heavier but climb well enough too.
I've never tried the pegasus...no braking surface. I've had a look at a few sets though. They do look pretty nice if you're into looks but they're the heaviest of the lot and possibly the least suitable for city riding getting away from lights and going up hill. A wheel is a wheel though...you can climb on anything. I suspect the pegasus rims are quite nice to TT and tarck on but I have no need to give them ago as I've got other deep profile rims already. Shall I say they look lovely again? Check up thread for pictures.
In terms of hubs...I've had Novatec and Miche and personally can't tell the difference but thats ok as they are the same price now anyway. I've heard good things about Varno's Quandos but I prefer to have sealed bearing hubs as from personal experience they tend to last longer.
EDIT: Just to add...I do my winter training on a pair of Varno's road wheels. I'm suitably impressed...I've only come across Shimano RS20 being equal value for money although Varno's are definitely built more sturdily.
