I periodically see people on bikes loaded up like that passing through here. When you're crossing Canada or going 'north to Alaska' and intent on camping and doing your own eats and don't have a lot of dough to spare, you just pack it up and go. Oftentimes towns are 100s of kms apart and supplies need to be adequate; I admire that kind of bike travel, but would not do it.
